Have you ever held a yard sale for your unused junk stuff? My girls and I decided to have a joint yard sale at my BFF’s house on Saturday, and it was the most exciting yard sale ever…literally. I know this was my first yard sale, but I don’t think it’s normal to have a hit and run, exploded fire hydrant, firemen, and Edward Cullen all in one morning. A paying customer got into her car, backed up into the fire hydrant across the street, and took off! …hence the water show and a visit from the fire department that was nice enough to take a pic at the request of my BFF…LOL. Unfortunately, I got there late after the morning rush. Who knew that yard sales were so popular at 7:30 in the morning! Nonetheless it was a success, and we had a blast hanging out. We’re doing it again this Saturday! Come by! :)

Do you love yakitori? Sometime during the week, my BFF, her hubby, and I went to Shino Japanese Grill. It’s really in the middle of nowhere, but if you’re in the Norco area for whatever reason, it’s definitely worth a visit. It was packed on a weekday which is a good sign. The food definitely warrants the wait. Yes, this was for 3 people, but we love variety!

I wish I can rewind to last night’s spring roll party! I invited some of my girls over for dinner, since my hubby is away on business for the week. I can’t rewind, so I might as well blog about it. I had two kinds of meat, galbi and dweji bulgogi (spicy pork). I have a recipe for really good dweji bulgogi here. You must try. But I just bought the pre-marinated kind at the Korean market yesterday, because the prep for spring rolls takes so long! We had another night of fun, as we always manage to do. Of course, we ended the night with something bad after talking about how healthy spring rolls are. I bought a new ramen that just hit the shelves in the US after a lot of hype in Korea. It was OK. Is it too late for a weekend recap of last weekend? But I had to share. Better late than never!

I must say it is totally awesome being near my besties. Living in SD, nobody could just “stop by” or come over to hang out at my place. We wasted no time, and they came over on Friday (moved here on Thursday) for another good time full of laughs…and food! On Saturday, my BFF treated me to lunch at one of her faves, Ojiya, a sushi bar by my place. I haven’t been back, but trust me, I have been thinking about it for the past week. Must go back ASAP! And the photos are only half the serving of what we had! My BFF loves me so. Sunday was spent with my hubby who got back from his bro’s bachelor party trip, and what better way to start than with S-1 at Thai Original BBQ?! It’s only 3 minutes away! Seriously?? Coming from Solana Beach where we were close to NOTHING, it is amazing being around so many yummy establishments, as well as everything else we need. You name it, we got it within 2-5 minutes. No joke. I love this city!

California Girl, It’s Undeniable

There’s been a slight change of plans. Remember my move to Arizona that I mentioned a couple of weeks ago here? Well, we’re not moving to AZ anymore! The past 6-8 months have been insanely exhausting, as our life was in limbo due to the question of where I’d be going to school. This definitely caused a lot of stress and anxiety for many people. Now I can happily and finally announce once and for all (again) that we’re staying in CA! Thanks to all of our family and friends for the constant support and understanding my crazy life for the past 6-8 months!

Arizona would have been a fun (?) chapter in our lives, but staying in SoCal makes sense for many, many reasons all around. I’m excited to be moving closer to our family and friends (near LA and OC), especially my BFF who will only be 12 miles away! That is some exciting stuff! At the same time, we’re sadly leaving many good friends we’ve made in SD, but I’m sure we’ll see them once in a while. Darn…I was really looking forward to my free tanning sessions in AZ (i.e. standing outdoors for 3 minutes). I guess I’ll have to resort to going to the beach instead! Boo hoo. :)

BTW, this silly photo was taken in the summer. I really needed a hat, because the top of my head was burning from the sun. My friend, Hannah, just happened to have this hat with her. Must be a mommy thing. I thought this captured California pretty well: Disneyland and the beach. I can’t get that in AZ. I guess I’m a California girl for life. It’s undeniable.

I drove three and a half hours in traffic and rain on Friday to meet my girls in Ktown for a GNO. We ended up going to round 5, but my phone pictures stop at round 2. That’s the sign of a good night.

If you haven’t been to KangHoDong in LA, it is an absolute MUST! The meat is so buttery and of high quality. No wonder we had to wait an hour and a half, but it was totally worth the wait and hype. I can’t wait to go back! Whenever that may be…

On Saturday, I took care of some errands and picked up some El Taurino and wang mandoo (literal translation: “king dumplings”) at HK Market for my hubby. What a nice wife I am. Driving around LA on Saturday, I remembered why I don’t miss living in Ktown: traffic. But I sure do miss the LA grub!

Home sweet home. On Sunday, I uttered the words, “I want bratwurst.” The next thing I know, my hubby was at the market getting brats and wine and cooking away. I asked what I should do, and his response was “Nothing, just relax.” What a nice husband he is.

Where to go from here?

I don’t know if you’ve noticed, but my blog has been “down for maintenance” for quite some time. During my almost one month hiatus, I did a lot of updating to the website and added a bunch of cool stuff for your enjoyment. No, I didn’t. I really didn’t have the energy or desire to keep updating, while I was trying to figure out my life for the next 3-4 years. Finally, everything has become official. After much debate and drama, I have chosen to call Arizona my home for the next 3 years. So in two weeks, my husband, our two furry babies (we adopted a Samoyed we named Sibi!), and I are moving to AZ! It’s crazy, but we’re actually pretty excited!

So where to go from here? With my blog, that is. If you’ve seen my “365 Project” in the making, it obviously came to a halt while my blog was down. I intended to bombard with posts of all the daily photos I’ve been taking, but it has been too long (almost a month) to do that. I can either pick up from where I left off, or just discard the project altogether. Leaning more towards the latter.

I probably won’t have much time to cook while taking a million photos anymore for my recipe posts. Should I just keep updating sporadically whenever I find the time? But I’m not really sure of how much time I’ll have either.

I can keep this as a journal, since that’s exactly what a blog is. I can update with little bits and pieces of my life, random musings, and what not. But who the heck would care about me and my life as a pharmacy student living in Arizona? Even for this post I’m sure there are only a handful of people who are still reading up to this point, namely my close friends, hubby, and parents. Heck, I don’t even know if my parents are still reading…LOL.

So I’m not sure where to go with this. Any thoughts or suggestions? I’d love to hear!

Thai Chicken Curry

After trying Thai in your kitchen, you’ll be reluctant to ever eat at or order from a Thai restaurant again. The first time I ever made Thai food myself, I couldn’t believe how easy and cheap it was! And the taste? I have to admit it’s restaurant worthy. And you know what you’re putting into it! It’s a serious win-win situation.

Thai Chicken Curry

Ingredients

  • 1 can coconut milk
  • 1 1/2 tsp Thai curry paste
  • 1 bell pepper sliced
  • 1 white or red onion sliced
  • 1 lb. chicken breast or tenders cut into strips or bite-size
  • 1 tbsp honey or brown sugar
  • 1 tbsp fish sauce
  • 1 tsp ginger paste or minced
  • 1 cup chopped tomatoes seeded
  • fresh basil leaves torn
  • frozen green peas
  • juice of half a lime
  • salt

Instructions

Bring about 1/4 can of coconut milk and Thai curry paste to a boil over medium-high heat in a large skillet, stirring to mix thoroughly. Add bell pepper and onion slices, and sauté until slightly softened, about 5 minutes. Add chicken, remaining can of coconut milk, honey (or brown sugar), fish sauce, and ginger. Stir and cook until chicken is thoroughly cooked, about 5 minutes. Add tomatoes, basil, frozen peas, and lime juice, and allow to simmer for about 1 minute. Season with salt according to taste.

First prep your veggies. And don’t be limited by these. You can add whatever your little heart desires. I used these yellow sweet mini peppers instead of bell peppers, because they were in the fridge being ignored.

Then cut your chicken anyway you want. I cut them into sashimi-looking pieces, because I wanted to feel like a sushi chef.

And these are the rest of the ingredients, minus the ginger paste. If you buy a little jar of the Thai red curry paste, it will last forever. Same goes for the fish sauce. I usually use the Three Crabs brand fish sauce, but this Thai Kitchen brand was lingering in my fridge for a while.

Bring 1/4 can of coconut milk and curry paste to a boil over medium-high heat, stirring to mix.

Sauté pepper and onion slices for about 5 minutes.

Add chicken, remaining can of coconut milk, honey (or brown sugar), fish sauce, and ginger. Cook for about 5 minutes or until chicken is cooked thoroughly.

Then add your tomatoes, basil, frozen peas, and lime. Simmer for about 1 minute. Doesn’t my nail color look great against the lime?

Forgot to add my frozen peas. I feel like frozen peas are almost a must for this. Not only does it add color, but I love the texture of them in every bite. Of course you have to use frozen peas for that almost-crunch. No canned peas please.

Add salt to taste, and garnish with fresh basil to be fancy. A bowl of steaming rice is also a must.

Wasn’t that super easy?
